Excerpt: Black Walnut Cake

Ingredients: Cake: 2 cups sifted + 2 Tbsp. sifted flour, 1 1/3 cups sugar, 3 1/2 tsp. baking powder, 1/2 tsp. salt, 1/2 cup margarine, 1 cup milk, 2 tsp. vanilla, 1/2 cup egg whites (unbeaten), 1/2 cup black walnuts; Frosting: 1 cup sugar, 1 cup black walnuts, 1 cup coffee cream

Directions: Place in a large mixing bowl the flour, sugar, baking powder and salt. In a separate bowl mix margarine, milk and vanilla. Add to dry ingredients and mix for 2 minutes. Add the egg whites and beat 2 minutes more. Fold in black walnuts. Grease and flour a 13 X 9-inch or two 8-inch pans. Bake at 350 degrees for 30 to 35 minutes. Combine frosting ingredients. Place in heavy aluminum pan and heat slowly. Cook about 15 to 20 minutes. Do not stir. Cool and spread on cooled cake. "A favorite Raffensperger cake!"

“Dr. Duttenhoffer lived across from the fire hall, which was known as the Conestoga Valley Fire Co. at the time. The fire alarm was actually set off from their house. Back in his time, he would make house calls and many of the women would give birth at home. Fran Trego remembers that many of the women did not have a doctor's care during pregnancy until they were ready to deliver the baby, and they never talked about it...”
